This is such an easy and delicious one-pan meal! I have really been loving cooking with chicken quarters lately- they are brown-able which gives the chicken such a great flavor, and they are also really moist even after cooking in the oven for an hour. Win and Win. *I have not tried this recipe with chicken breasts so I’m not sure how it would turn out. I would recommend serving this with grilled asparagus or roasted veggies to make for a well rounded meal!
I legitimately had to pause after taking one bite. The flavors swirling together in my mouth- a hint of spice from the jalapeños, sweetness from the orange juice in the meat, and a smokey profile from the avocado sauce- straight PERFECTION. For the carnitas meat, I used this recipe from Carls Bad Cravings: https://carlsbadcravings.com/slow-cooker-pork-carnitas-recipe/. Placed on a corn tortilla and topped with this salsa and smokey creamy avocado sauce.
Tip: to get the avocado in a nice line, put sauce in a plastic sandwich bag and cut off one of the corners. Squeeze the sauce like a pastry bag on top of your taco!
I made chili nearly every week when living in the Czech Republic, tweaking it every time I made it. But after making it THIS way, I have never changed it since, and make it this way every singe time!
My all-time favorite dressing for kale! Top it off with crispy chickpeas, croutons and grilled chicken to make it quite a satisfying and delish meal!
