These chocolate peanut butter buckeyes are an absolute staple in my family’s house.
You’re getting a look into the Fitz Family cookbook with this one! These buckeyes are present at every big family gathering, and are always a favorite by every. single. person. My dad is the baker of my family, so you can always count on him to whip up a big batch of buckeyes whether it be Thanksgiving, Christmas, a big football game, a casual Thursday.
I am having Thanksgiving here in Charlotte with my in-laws, and the one menu item that I insisted on having was….you guessed it- buckeyes. And what’s SO perfect about having these at Thanksgiving is if you resist the urge to eat all of them at once and save some for the weekend, you can eat them during the OSU v Michigan game the Saturday after Thanksgiving (go bucks!).
What I love about this recipe is that technically it counts as baking, but it’s like, the easiest baking you will ever do. It’s pretty tough to mess up!
You will definitely want to use a stand mixer for this to make sure the powdered sugar, peanut butter and butter get mixed together super well and you don’t find yourself chomping into straight sugar. Kneading it with your hands at the very end may be necessary too.
Honestly the most challenging part about this recipe is melting the chocolate.
Why does that stuff burn so gosh darn easily in the microwave?? What I found works the best is to microwave about 1/2 c of chocolate, 30 seconds at a time. Remove it from the microwave and stir, and keep doing that until it is all the way melted. Once it is melted, you will want to add a small drop of canola oil (like the size of a dime) and stir together. This is going to make the chocolate a bit more viscous aaaaand shiny.
To get the traditional buckeye look, use stick a toothpick in each of the peanut butter balls and dip into the chocolate, leaving the top un-dipped. You may need to freeze the buckeye balls for a half hour or so to make dipping them easier! I found that using a ramekin was easiest because it is a tad bit bigger than the buckeye ball, making dipping easy and your chocolate waste less. Once it is dipped, place the buckeye on a baking sheet covered in parchment paper and place in the fridge to harden the chocolate (my dad wants me to be sure to tell you not to put them in the freezer because it will ruin the chocolate). Once the chocolate is hardened, they are ready to be enjoyed!
If you manage to save some for later, store them in an air tight container in the refrigerator!
I think it’s important for you to know that I don’t only eat “healthified” desserts. I absolutely eat desserts with powdered sugar and butter and chocolate (cough cough buckeyes and many many other desserts). Which is why I’m posting this. Because sometimes you just need the real deal, ya feel me?
