I am in Los Angeles this week visiting my bestie and I wanted to make some food for Bri to have to eat for the week. He has been SO busy lately, so making some yummy food for him to have when he gets home from a long work day is one of the ways that I care for him and love him.
Food is most definitely my love language. Even when I’m out of town.
I don’t trust him to make himself a vegetable with a meal (sorry, babe) so I wanted to do a one pan meal that has it all. The chicken in this dish is bone in, skin on thighs and drum sticks. That’s a really important detail that you won’t want to skip out on for this- the reason being, it is juicier and fattier than chicken breasts. So when it is cooking on top of the potatoes and broccoli, all of those juices are going to drain down onto the other food and give it more flavor. I’m kind of over chicken breasts for this exact reason- skin on, bone in is SO much more interesting in regards to flavor and texture and juiciness. And it’s actually cheaper at my grocery store, too. WIN WIN!
I love this recipe for families because it is so easy on the mom or dad that’s making it.
Simply peel and dice the potatoes, add in some broccoli, top if off with chicken, throw it in the oven and BAM dinner is served. Having worked and talked with so many clients, I am utterly aware that the reason busy families go out to eat more than cooking at home is because of time and convenience. And so I want to swoop in and provide you with recipes that don’t take a ton of ingredients and don’t require a lot of time and thought so that you can easily make a meal at home, gather around the table with your family and eat together.
SO because of that, let’s say you don’t have all of these spices and don’t want to go to the grocery store just to buy marjoram. I gotchu. Do you have Italian seasoning? PS, if you don’t, that is a spice blend you should invest in, it is so versatile and gives so much flavor. Okay anyway if you have Italian seasoning, just use that on the chicken along with the olive oil and lemon juice and it will be super tasty! Also- don’t have a lemon and don’t want to run to the store to buy one? That’s okay too! Just skip it- it will still taste super good! One more- if you only have chicken thighs or only have chicken drumsticks- that is A-OKAY! One or the other or a combo of the two will work just fine.
I do this all the time with recipes- take out some ingredients here and add others there.
Yes, there are certain ingredients in recipes that you can’t cut out because it will ruin the dish, but other times, it is totally valid to skip out on some of the “extra” ingredients. It will taste the BEST if you follow the recipe exactly, but we don’t live in a perfect world and people are busy and families are struggling to even eat a meal together. So if you skip the lemon or the lemon juice, the world will keep spinning and the recipe will still taste good.
