One Pan Herb Lemon Chicken Broccoli and Potatoes

  1. Preheat oven to 400 degrees.
  2. In a gallon size plastic bag, add chicken thighs and drum sticks. Add 2 tbsp olive oil and lemon juice.
  3. In a small mixing bowl, combine paprika, sage, garlic powder, salt, marjoram and oregano and stir together.
  4. Pour herbs into the plastic bag over the chicken. Seal the bag and toss so that the herbs are evenly coating the chicken.
  5. In a large mixing bowl, combine the diced potatoes and broccoli. Add 2 tbsp olive oil so that they are coated in olive oil, 1/2 tsp italian seasoning and 1/2 tsp salt.
  6. On a rimmed baking sheet, add the potatoes and broccoli and even distribute throughout the sheet.
  7. Place chicken on top of the potatoes and broccoli, and lemon slices on top of the chicken.
  8. Place in the oven for ~45 minutes. Top of the chicken should be browned and chicken should be cooked through.
  9. Enjoy!
