Monday- The Easiest Healthy Vegetable Soup
Tip: I would make this on Sunday night so that dinner is all ready on Monday night. I also love eating this for an easy lunch throughout the week too!
Tuesday- Brown Butter Scallops with Parmesan Risotto by Pinch of Yum
Tip: This is a pretty quick recipe as is so no prep work is needed to be done ahead of time.
Wednesday- Spicy Mexican Tofu Tostadas
Tip: press out your tofu on sunday night. Keep it in a covered container with a paper towel underneath it and then all you have to do on Wednesday is crumble it and marinate it!
Thursday- Cashew Chicken Quinoa Bake by Fit Foodie Finds
Tip: Not really anything you can prep ahead of time for this one either.
Friday- 5 Ingredient Bacon Asparagus Pasta by Gimme Some Oven
Tip: if you really wanted to you could cook off the bacon at the beginning of the week so you have it ready to go. Everything else can be done quickly on Friday night.
