I’m calling it now- this recipe is going to be the new favorite recipe around here. So we got a waffle maker for our wedding and haven’t had a chance to make use it yet. And I was really biting at the chomp to whip that sucker out and put her to use. And it only felt right that since we just moved down south, that I make a recipe as an ode to the south. But there are so many chicken and waffle recipes out there that are friend in all their glory. So I wanted to do a baked version and see if it was just as delicious and GUESS WHAT- IT IS!!!!
Like, I so wish you all could have been sitting at our table with us when Brian was eating this. Never have I ever heard that man talk about a dish as much as he talked about this during- and after- the meal. The honey chilli lime dressing is the real MVP here, so I’m going to go out on a limb and say you’re going to be seeing this dressing in recipes in the future too 😉
So since I wanted to use my waffle maker, I made them from scratch (kinda) using Bob’s Red Mill Whole Grain Waffle Mix. But you can 100% just use frozen waffles if you so desire. Either way works, as long as ya got the waffles you’re golden.
So once your waffles are done you are going to make the chicken. The chicken breasts that I got were thick so I cut them in half horizontally first, and then cut the halves in half. You can see from the pictures about the size that the chicken should be. It’s a good chicken to waffle ratio at this size.
You coat the chicken in a mixture of flour, paprika, salt and pepper and then bake the chicken. To get the nice crispy top like you see in the pictures, pan fry the baked chicken for a few minutes on each side to get a little extra boost of flavor in the browning (more detailed instructions are in the official recipe down below).
When the chicken is done cooking you whisk up the honey, hot sauce of your choice (I used smoked Tobasco) and lime to make the sauce, and douce the chicken in it to give your taste buds a dance party in your mouth. And there you have it!!
To make this a whole meal, I think this would pair really well with a side kale salad and a baked sweet potato!

Baked Chicken N’ Waffles With Honey Chili Lime Dressing

These baked chicken and waffles with a honey chilli lime drizzle is absolutely irresistible and impossible to mess up.
Ingredients
Chicken
- 4 waffles
- 2 chicken breasts
- 1/2 c all purpose flour
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tbsp canola oil
Honey Chilli Lime Dressing
- 2 tbsp honey
- 1/4 of a lime
- 1 tsp hot sauce
Instructions
Prepare the waffles as instructed
To prepare the chicken: Cut the chicken breasts in half horizontally, and then cut the halves in half. You should end up with 4 thin chicken looking patties. In a mixing bowl, combine the flour, paprika, salt and pepper and stir together. Place the chicken in the flour mixture and coat the chicken so it is fully covered in flour.Heat up the canola oil in a large frying pan and place the chicken in the pan. Flip after 2 minutes, or when the top of the chicken starts to get a golden brown color (the point of this step is simply to brown the to and bottom of the chicken for extra flavor and crispiness). Remove chicken from heat. Line a baking sheet with parchment paper and place the chicken breasts on top. Place in the oven at 350 for 10-15 minutes, or until the internal temperature reaches 165.
To prepare the drizzle: In a small mixing bowl, combine the honey, juice from 1/4 of a lime and hot sauce. Whisk together with a fork until it is well combined. Place 1 piece of chicken on top of each waffle and drizzle the honey dressing over top of each as to coat the entire piece of the chicken.
Serve immediately.
