Are you really a food blogger if you don’t come up with a pumpkin recipe in October?? I looooove using pumpkin in my recipes, so I was so excited when October came because I could get it out and get cookin! For breakfast I typically tend to prefer savory over sweet. Until I made this recipe. I am a changed lady.
Oh my gosh y’all after eating this I wanted to run and put on a flannel and boots and go apple picking- it was giving me alllll the fall feels. Despite the fact that it is still 91 degrees in Charlotte. If fall weather has hit you, cozy up this weekend with a big blanket, a candle and a fat stack of this french toast! Not #basic, just engaging in the holiday spirit 🙂
Typically when I make French toast I use a frying pan to cook it. So when I was creating this recipe I did both- some in the frying pan and some in the oven. And I have to tell ya, the ones in the oven were so much better! The texture of the bread and the lightly crispy edges from baking it were unreal.
So grab your can of pumpkin (make sure you get pure pumpkin puree, you don’t need anything else on the ingredient list!) and get in the fall spirit with this breakfast recipe!

Description
This baked pumpkin french toast is what breakfast dreams are made of.
Ingredients
- 1 loaf french bread
- 1/2 c pumpkin puree
- 2 eggs
- 1.5 tsp cinnamon
- 1/2 c milk
- 1 tbsp brown sugar
- 1 tsp vanilla extract
- 1/2 tsp nutmeg
- 1/2 tsp ginger
Instructions
Preheat oven to 350 degrees and lightly grease a baking sheet. Slice the loaf of french bread into thick slices.
In a shallow bowl, combine the eggs, pumpkin and milk and whisk together with a fork until it is well combined. Add in the cinnamon, nutmeg, ginger, vanilla and brown sugar and whisk together.
Scoop out the pumpkin batter with a small spoon and coat both sides of each piece of bread, using the spoon to evenly spread it across. Place the coated bread on the baking sheet and place in the preheated oven.
Bake for about 5 minutes on one side, remove from the oven and flip each slice of bread so that it can cook on the other side. Bake for 5 more minutes and remove from the oven. The French toast should be lightly toasted. If it is not, place it back in the oven for 2-3 more minutes.
Notes
You could substitute almond milk for regular milk to make the recipe vegan.
