Chicken parm….pretty good right?
What about chicken parm in meatball form??? GAME CHANGER! I can’t even make up Brian’s reaction to these meatballs….he was like a ravenous animal while I was shooting these, literally begging me to eat them. And then when it came dinner time, I have never heard so many “mmmms” and “wows” in my life. Either he just really loves me or these were a home run….I’m gonna go with a bit of both 😉
I made these and then added them to some of my “lazy girl pasta sauce” over noodles and BAM we had ourselves quite a delectable meal! Keep scrolling for a step-by-step instruction on how to make them and for the recipe!
As with 99% of my recipes, you are going to start by sauteing the garlic and the onion.
I feel like I have taken a photo like such a million times, so hopefully you guys have this culinary skill down pat at this point.
Once your onions and garlic are done cooking, add them to a large mixing bowl along with your bread crumbs, parm, egg and spices. Stir it all up niiiiice n good and then add in the chicken. Again, stir all of that up niiiiice n good.
Next, with ULTRA CLEAN hands, form your meatballs and place them on a plate, because you’re not done with them yet. In a small bowl, mix together your other amount of parm and breadcrumbs (listed as “topping” in recipe), and roll each meatball in this mixture making sure every meatball is completely covered.
This is the best part- stuffing the meatballs with cheese.
I don’t quite know how to describe how big of a piece the cheese should be, so I took a photo in hopes that helps you determine how much cheese to stuff inside. My chunks of cheese were about an inch long and 1/2 inch wide. And then you literally just press the cheese into the middle of the meatball.
Side note, I kind of hate that these look like those cookies you make at christmas time that you roll in sugar and then press a reese’s cup in the middle….sorry, these are most definitely not those.
And now you just need to cook them!
Spray a muffin tin with oil (hopefully you have a full size oven that can fit a full size muffin tin so you don’t have to do 3 individual batches….) and plop a meatball inside the hole. Cook at 350 for 20 minutes and THERE YOU HAVE IT!
So much flavor all in one little meatball! I love that this is a chicken meatball to give you a lean protein and another option other than red meat. However if you are feeling a meatball made of beef, check out my mushroom meatball recipe 🙂

Chicken Parmesan Meatballs

Description
These chicken meatballs stuffed with extra cheese is all of the delicious flavors of chicken parmesan rolled into one.
Ingredients
Meatballs
- 1 tbsp olive oil
- 1 yellow onion
- 2 cloves garlic
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes
- 1/2 tsp dried parsley
- 1/4 c bread crumbs
- 1/4 c grated parmesan cheese
- 1 egg
- 1 lb ground chicken
Topping
- 1/4 c bread crumbs
- 1/4 c grated parmesan cheese
Cheese to stuff inside the meatballs
- 4 oz white cheddar or mozzarella cheese
Instructions
In a frying pan, heat up olive oil over medium heat. When heated, add diced onion and garlic to the pan and cook for ~4 minutes or until translucent. Remove from heat.
In a large mixing bowl, combine onions, garlic, bread crumbs, parmesan, salt, pepper, parsley, red pepper flakes and egg. Stir together. Add in ground chicken to the mixing bowl and fold the chicken and spice mixture together until it is well combined. In a small mixing bowl, combine bread crumbs and parmesan. You will roll your meatballs in this. Using a spoon, form your meatballs. This recipe should make 18-20 meatballs. Once all of your meatballs are formed, roll them individually in the bread crumbs and parmesan topping. Stuff each meatball with a cube of cheese by pressing it down in the center of the meatball. Spray a muffin pan with oil. Place one meatball in each hole of the pan.
Place in the oven at 350 degrees and cook for 20 minutes. Serve over pasta and sauce and enjoy!
Notes
Shredded cheese isn’t ideal, but if it’s all you have, will get the job done!
