This one’s for the giiiirrrllsss (and boys)…..who answered they wanted vegetarian recipes! I made this for dinner the other night and I’m not kidding you I think I drifted off to heaven for a quick sec. I’m not usually a huge chickpea fan, but I didn’t know what to make for dinner and I had a can of them in the pantry (which isn’t actually a pantry, it’s more of a dresser turned pantry, makeshift situation) so I gave them a whirl and OH did they shine!
Another superstar of this recipe is the roasted garlic. Roasting the garlic is an absolute must, don’t cheat yourself out of not roasting ze garlic. It gives the garlic a completely different flavor profile, one that I am quite obsessed with and have been doing so much lately. ALSO don’t skimp out on roasting the tomatoes. You have this nice, hot and toasty sandwich, you don’t want to ruin it by slapping on a slice of cold tomato. We had this sammy for dinner along with roasted green beans and my roasted red pepper quinoa mac n cheese. So yummy.

Description
This vegetarian chickpea and avocado sandwich is a delicious lunch or dinner recipe.
Ingredients
- 1 can chickpeas, rinsed and drained
- 1 c mushrooms
- 1 avocado
- 1 tbsp lemon juice
- 1 tsp red pepper flakes
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp tomato paste
- 1 tsp cumin
- 4 cloves garlic
- 1 tomato
- 4 slices whole grain ciabatta
- 2 slices cheese
- olive oil
Instructions
Line a baking sheet with tin foil. Place peeled garlic and tomato slices on covered pan and lightly drizzle olive oil over them. Cook at 400 degrees for 20 minutes (keep the oven on after they are done cooking as you will toast the sandwiches in the oven).
Heat up olive oil in a small frying pan and add mushrooms. Cook on medium heat for ~10 minutes, stirring frequently.
In a mixing bowl, combine chickpeas, avocado, mushrooms, cumin, lemon juice, tomato paste, red pepper flakes, salt and pepper. Smash all ingredients together with a fork. Your chickpeas should maintain some of their structure but be partially smashed.
Spread the roasted garlic on 2 pieces of the bread (2 cloves per piece of bread). Top with slice of cheese. On the other pieces of bread, apply a generous amount of chickpea/avocado mixture. Top with roasted tomato slices.
Place bread on the baking sheet, and put in the oven for 5-10 minutes, or until the bread is lightly toasted.
Remove from oven, form your sandwiches, cut in half and enjoy!
Notes
I used white cheddar cheese, but mozzarella or provolone would also be delicious.
