These chocolate coconut bites are one of my favorite easy dessert recipes!
I love almond joys, and this recipe is my take on the almond joy. Did I mention it only has 3 ingredients???
I am making this one SO easy on you guys. All you have to do is pit the dates, put them in a food processor with the coconut and blend them together. Next, form them into balls and dip them in chocolate, like you would for Buckeyes, but cover the entire ball with chocolate.
Pop them in the fridge, and they are ready to enjoy!!
These 3 ingredient chocolate coconut bites are a healthy version of almond joys.
- 4 pitted dates
- 1 c unsweetened coconut
- 1/2 c dark chocolate
- 1 tbsp canola oil
Put pitted dates in a food processor and process for 30 seconds. Add coconut flakes into food processor and blend until the dates and coconut are well combined.
Melt dark chocolate in the microwave, 45 seconds at a time and stirring to prevent it from burning. Stir in canola oil.
Roll coconut and date combo into bite sized balls. Dip in dark chocolate until it is completely covered. Place on parchment paper and keep in the refrigerator/freezer
You can also use semi-sweet chocolate, if you prefer that to dark chocolate!
