Truly I have no idea where the thought “oh I really want to make a batch of corn fritters” came from.
But am so glad I did! I served these at dinner the other night and it was a hit with the whole fam (even my super picky eater sister s/o to @lauren)! Ya know what these would be realllyyyy good with? The Carnitas tacos n toppings recipe, just sayinnnnn.

Corn Fritters

A super delicious appetizer that everyone will love!
Ingredients
Fritters
- 1 c all purpose flour
- 1 c golden corn (canned)
- 1/4 c water
- 1 tsp lime juice
- 1 egg, whisked
- 1 tbsp cilantro, finely diced
- 1/4 large red onion, diced
- 2 tsp chipotle chili powder
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp cumin
- 2 tbsp vegetable oil
Avocado topping
- 1 medium avocado
- 1 tsp garlic powder
- 1/4 tsp salt
- 1 tsp lime juice
- 1/4 c cherry tomatoes, diced
Instructions
To prepare the fritters: In a large mixing bowl, combine flour, chipotle powder, salt, paprika and cumin and stir together. Add in egg, corn (rinsed and drained), lime juice, cilantro and red onion. Stir together. Add in water to stick ingredients together. You may need more water- slowly add it in until all ingredients are well combined and batter is sticky. Heat oil in a large pan on medium-high. Spoon out 2 tbsp of corn batter and press down with back of spoon. Pan fry for 2-3 minutes on each side or until browned. Place on a paper towel covered plate to drain of excess oil.
To prepare the avocado topping: In a small bowl, mash avocado. Add in the rest of the ingredients and stir together. Top fritters with ~1 tsp of the topping.
Notes
You could also use fresh corn if you have it and it is in season!
