Monday- Spicy Sofritas Veggie Bowls by Pinch of Yum
Tuesday- Hoisin Salmon with Zucchini Slaw by Half Baked Harvest
Wednesday- Middle Eastern Inspired Salad with Chicken
Thursday- Fish Taco Bowls by What’s Gaby Cooking
Friday- Chicken Tortilla Soup by Carlsbad Cravings
Tips:
Keep the cod and salmon. De-thaw them in the refrigerator during the day so they are ready at night.
Make the soup at the beginning of the week. Have it for a lunch too, if you wish! But by the time friday comes around, you won’t have to do anything except pop it in the microwave.
Make a double serving of the long grain or jasmine rice on Monday when you make the sofritas so that you have rice already made for your fish taco bowls on Thursday!
