This is my all-time favorite kale salad!
If I don’t know what to make for dinner, this is what I make. Because 9 times out of 10 I have the ingredients I need and it never gets old.
I also love serving this salad with Italian meals, like my chicken parmesan meatballs.
This is actually the recipe that turned my husband onto kale. He was kind of skeptical of the tough green leaf before he had ir this way.
They key to making it less tough, is massaging it.
Yep, I said massage. Don’t be afraid to get up close and personal, massaging the dressing into the leaf. This is breaking down the cell walls in the kale, making it much more enjoyable to eat.
Top it off with some grilled chicken or chickpeas, and you have yourself one delicious meal!

Kale Caesar Salad

Ingredients
- 1 bunch kale
- 1 tbsp dijon mustard
- 1/2 c olive oil
- 1 tsp garlic, diced
- 1/4 red onion, finely chopped
- 1/3 c parmesan cheese
- 1/4 tsp salt
- 1/2 avocado, smashed
Instructions
Wash kale and pat dry with paper towels.
Whisk the olive oil, mustard and salt together. Add in the red onion, garlic, parmesan cheese and avocado and stir until well combined. Remove the stems from the kale and rip into bite size pieces. Place kale in a large mixing bowl.
Pour the dressing over the kale and massage for several minutes. Top with extra parmesan cheese and croutons if you so desire.
Notes
To make this into a meal, top it off with grilled chicken or chickpeas to add some protein.
