That is ALL you need for this delicious lemon garlic shrimp, rice and green beans salad! I love meals like this because you only have to think about making one thing because it has everything all in one, as opposed to having a protein, and then having to come up with other ideas of what you are going to serve with it.
I love all of the flavors in this dish. The roasted green beans give a deep flavor, while the parmesan cheese adds umami and the lemon gives a nice zing at the end.
A quick story about green beans- so my mother in law used to hate green beans. But she had only had them boiled in water and topped with some butter and salt. But then I roasted green beans for her, got them nice and crispy with a little bit of char and SHE LOVED THEM!! The way that you prepare foods makes the absolute biggest difference in how they taste! If you have only had a certain vegetable prepared one way, try preparing it another way, maybe a more exciting cooking technique, and see how you like it.
I would venture to guess that your opinion on that vegetable may change. These roasted green beans may be just the right place to start experimenting 🙂

Lemon Garlic Shrimp, Rice and Green Beans

Description
A delicious and healthy all-in-one meal!
Ingredients
- 2 c black rice, cooked
- 2 c green beans
- 6 cloves garlic, diced
- 8 oz shrimp
- 1 lemon
- 4 tbsp olive oil
Instructions
Toss green beans in 1 tbsp olive oil with 2 cloves of garlic (diced). Place on a baking sheet and bake at 400 for about 15 minutes or until crispy.
In a frying pan, heat up 1 tbsp olive oil. Add shrimp and squeeze the juice from half of a lemon on top of shrimp. Add 2 cloves diced garlic. Flip shrimp occasionally, remove shrimp from heat when they are a light pink color and have some browning on both sides.
In a small bowl, combine 2 tbsp olive oil, 2 cloves of garlic (diced) and the juice from the other half of the lemon. Whisk together.
Combine rice, cooked green beans and shrimp in a large bowl. Pour in olive oil/garlic/lemon mixture and toss together. Top with salt to taste and parmesan cheese if you so wish!
