These Peppermint Date Energy Balls are my new favorite snack.
These came to be because I loooooove the Luna white chocolate peppermint protein bars. So obviously I tried to recreate the flavors from that bar. And because who doesn’t love a chocolate peppermint combo around the holidays??
These energy balls are super easy to make, but you will need a food processor or a solid blender to get the right consistency of the walnuts.
What I love about these energy balls is that you can throw a couple of them in your bag for the day as a snack, so when a sweet craving comes along, or you feel hanger starting to creep up on you, peppermint balls to the rescue!
Because the base these are made out of walnuts, dates and cacao powder, they have protein, fiber and fat- the key 3 nutrients to help satiate hunger. Yep, yep, gimme all that.

Description
A healthy sweet treat full of protein and energy!
Ingredients
1 c walnuts
1 c daes
3 tbsp cacao powder
5 starlight peppermints OR 1 candy cane
1/2 c white chocolate
1 splash canola oil
crushed peppermint (for topping)
Instructions
Add walnuts to a food processor and blend until smooth. Add in the dates, cacao powder and peppermints to the food processor and blend (stirring as necessary) until smooth.
Roll the dough into balls with approximately a 1 inch diameter. Place on a covered baking sheet covered with parchment paper.
Melt the white chocolate in the microwave (30 seconds at a time, stirring in between 30 second segments). When chocolate is melted, add a dash of canola oil and stir until combined.
Drizzle the white chocolate on top of the balls evenly. Top with more crushed peppermint. Store in the refrigerator.
