I swear this recipe tastes just like a blueberry muffin!
It’s one of my favorite breakfasts that never gets old to me.
It is delicious and is packed full of nutrients. The chia seeds provide some omega-3 fatty acids. The greek yogurt gives you protein, and makes the oats thicker than if you were to use almond milk.
Oh, and did I mention how easy it is to make?? Throw everything in a mason jar, mix together and pop in the fridge! You don’t even have to do any cooking! Make a few at the beginning of the week to keep in the fridge on mornings you need something to grab and go.
The last thing I want to do early in the morning is think about what I want to eat for breakfast. Which is why making these at the beginning of the week makes it so much easier on yourself in the morning!

Lemon Blueberry Overnight Oats

Description
These overnight oats taste just like a blueberry muffin!
Ingredients
- 1/2 c old fashioned oats
- 1/2 c plain greek yogurt
- 1 tbsp chia seeds
- 1/4 c blueberries (fresh or frozen)
- 1 tsp lemon zest
- 1 tsp honey
Instructions
Combine all ingredients in a tupperware or mason jar. Let sit in the fridge overnight.
Heat up in the microwave for 1 minute in the morning.
Notes
Old fashioned oats have the most nutrients.
