This quinoa and roasted red bell pepper quinoa is a healthy twist on traditional mac and cheese.
- 2 c quinoa, uncooked
- 2 c chicken or beef broth
- 2 c water
- 1 red bell pepper
- 1 tbsp olive oi
- 1 clove garlic
- 3 tbsp butter
- 3 tbsp all purpose flour
- 2 c milk
- 3 c shredded cheddar cheese
- 2 tsp paprika
- 1 tsp black pepper
- 1/2 tsp salt
- 1/4 c panko bread crumbs
- 1/4 c parmesan cheese
To prepare the bell pepper: Cut the bell pepper in half and remove the stem and seeds.Line a baking sheet with parchment paper, and place the pepper flat side down. Stick in the oven preheated to 400 degrees for about 25 minutes.
Pour broth and water into a large pot, add the quinoa and cook on medium heat until the liquid has all evaporated.
In a large frying pan, heat up your olive oil and then add in your diced garlic. Cook for several minutes until it is a caramely color. Add in the butter to the frying pan and let it melt all the way. Add the flour and then whisk it together with a fork until it is a thick paste consistency. Add the milk and cheese to frying pan paste on medium heat and stir continually so that the cheese doesn’t burn. If it starts boiling, lower the heat.When the cheese is all melted, add in the spices and stir together.
By this point your quinoa should be done cooking. Pour the cheese sauce into the pot of quinoa and stir until it is mixed all together.
The red peppers should be cooled by now and the skin should be easy to remove, so just with your hands pull off as much skin as you can.
Give the red pepper a rough chop into bite size pieces and then add it to the cheesy quinoa and give it a stir to get the pepper evenly distributed.
In a small mixing bowl, combine the bread crumbs and parmesan cheese. Pour the mac and cheese into a 9×11 baking sheet and top with bread crumbs and parmesan cheese. Place in the oven at 350 for 20 minutes.
Instead of panko bread crumbs, you could totally make your own by putting bread in a food processor and then toasting the crumbs!
