Umami Bowl

A super delicious and healthy bowl of farro, broccolini and salmon!



Baked Salmon

  • 2 (5 oz) salmon fillets
  • salt
  • pepper
  • 1/4 tsp garlic powder
  • 4 slices of lemon


  • 1 c farro
  • 2 garlic cloves, minced
  • 1/2 yellow onion, diced
  • 2 c white mushrooms, roughly chopped
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 2 sprigs of thyme

Roasted Broccolini

  • 1 bunch broccolini
  • 1 tsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt


First prepare the farro:

Preheat the oven to 350 degrees. Spread farro out on a baking sheet, and place in the oven for 10 minutes. While the farro is toasting, boil a large pot of water with 2 tbsp salt,  1/2 of a yellow onion (diced), thyme sprigs and 2 garlic cloves (minced) in the water. When the water is at a boil, add in the farro and cook for about 20 minutes, or until the farro is soft. Place a strainer over a large bowl and strain out the water from the farro into the bowl (the onions and garlic will remain in the farro). Pour the water back into the pot you were previously using.

Secondly, prepare the broccolini:

Cut off the ends of the broccolini and rinse thoroughly. Bring the water you preserved from the farro back up to a boil and place the broccolini in the boiling water for ~45 seconds. The broccolini should get brighter in green color. Remove the broccolini from the boiling water and place in a bowl of cold water. After several minutes of sitting in the cold water, remove the broccolini and pat it dry with paper towels. Toss the broccolini with olive oil, garlic powder, onion powder and salt.

Next, prepare the salmon:

Increase the temperature of the oven to 400 degrees. Lightly sprinkle a pinch of salt, a pinch of pepper and a pinch of garlic powder over the top of the salmon. Place two slices of lemon on each fillet of salmon. Cover a baking sheet with parchment paper and place the salmon and broccolini on top. Place in the oven for about 20 minutes, or until the salmon reaches an internal temperature of 145 and the tops of the broccolini lightly brown.

While the salmon and broccolini are cooking, heat up a medium sized frying pan with 1 tbsp olive oil. Add mushrooms to the frying pan and cook, stirring occasionally, until the mushrooms are a dark brown color. Add mushrooms to cooked farro and mix together.

Assemble the farro, broccolini and salmon in a bowl and serve!
