These oatmeal walnut chocolate chip cookies are the absolutely perfect cookie. Crispy on the edges and soft in the middle.
- 2 c old fashioned oats
- 1 and 1/4 c all purpose flour
- 2 c brown sugar
- 1 tsp baking soda
- 1 tbsp vanilla extract
- 2 eggs
- 1 stick of unsalted softened butter
- 1/2 tsp salt
- 1.5 c chocolate chips
- 1/3 c chopped walnuts
Preheat oven to 350 degrees.
In a medium sized mixing bow, combine the oats, flour, salt, and baking soda with a rubber spatula.
In another medium sized mixing bow, cream together the softened butter, eggs, vanilla extract and brown sugar with an electric hand mixer.
Pour the butter mixture into the dry ingredients and stir together with a rubber spatula. Add in the chocolate chips and chopped walnuts.
Place dough in the refrigerator for 30 minutes.
Cover a baking sheet with parchment paper. Place ice cream scoop sized dough balls onto baking sheet.
Bake for 11-12 minutes.
