This taco “meat” is so simple, super tasty, and a lot cheaper than ground beef!
A delicious vegetarian alternative for taco meat.
- 1 sweet potato, cooked and de-skinned
- 1 c lentils, cooked
- 1 yellow onion, diced
- 1 c mushrooms, diced
- 2 tsp paprika
- 1.5 tsp cumin
- garlic salt to taste
- red pepper flakes to taste
Heat up olive oil in a frying pan over medium heat. Add the mushrooms and the onions.
When fully cooked, add the rest of the ingredients and stir together.
I like serving this with sauteed zucchini, roasted tomatoes and of course, guacamole!
