I’m not vegetarian but boy do I love me a good veggie burger.
I haven’t found one in the grocery store that I absolutely love, so I created my own, and even Brian loved it! That’s a win.
I love making my own veggie burgers, and I have a bunch of different recipes for them. But you can’t beat a classic, back to the basics, veggie burger.
And personally, one of the best things about it is its versatility! Top it with whatever condiments or toppings you want and it will still be delicious!

Classic Veggie Burger

Description
This classic veggie burger is so delicious, you won’t even miss the meat!
Ingredients
- 1/2 c brown rice, uncooked
- 1 red bell pepper
- 1 yellow onion
- 2 garlic cloves
- 1 c mushrooms, diced
- 3/4 c oat flour
- 1 can red kidney beans, rinsed and drained
- 1/2 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp red pepper flakes
Instructions
The rice takes the longest to cook, so start by boiling water and cooking your rice.
Next, dice the onion and garlic and add them to a saute pan with hot olive oil. Cook for a few minutes before adding the diced red pepper and mushrooms. Cook for about 10 minutes or until the peppers are soft.
Add cooked vegetables to a blender and blend until it is mostly smooth, but not completely. I used an immersion blender.
Next, add the red kidney beans and give it a quick blend. You want the beans to be chopped into smaller pieces but not blended all the way to a smooth consistency.
Stir in the rice and spices. Then add in the oat flour, 1/4 c at a time. You may not need all of the oat flour, but keep adding until it is a consistency that will stick well together.
Once you have a good consistency, make the dough into patties. I had enough dough for seven patties. Let sit in the fridge for about 30 minutes (this will help keep them in tact).
When you are ready to eat them, pan fry them with olive oil, about 2 minutes on each side. You should get a nice brown color, it should almost look charred.
Add your favorite burger toppings with a bun!
Notes
Top the veggie burger off with avocado, tomato, lettuce and red onion for the real deal!
