Welcome to another “What I Ate Wednesday”!
I am still trying to get in the groove with when to eat on school days. Lemme tell ya, we eat SO much at school. Culinary people LOVE to eat. Which is awesome, but sometimes I leaving feeling like a stuffed chicken, and throws off the rest of my day for eating because I am so full. So, it’s a work in progress.
Take Tuesday, for example.
I started off my morning with coffee (this 5am wake up call is killin me), and overnight oats. For the oats I made a few batches at one time on Sunday night with oats, unsweetened almond milk, almond butter, chia seeds, cinnamon, honey and a banana.
In the morning all I do is heat it up and viola- brekkie is ready in 1 minute.
For my snack I packed two of my Peppermint Date Cacao Balls and an apple. I had no idea that I was going to have such a luxurious meal at lunch!
And boy ohhhh boy, lunch was a TREAT! Lunch at school is usually a hit or miss- students are making the dishes and they are still learning, so it is not always the best. But today, wow. The first course was mussels scampi with like a lemony, garlic breadcrumb crumble on top.
Then the second dish was scallops, crab ravioli and veggies in a light tomato sauce. Scallops are my absolute faaaaavorite- my friend and I essentially licked our plates clean. Holyyyyy cow this was good.
But wait, there’s MORE. We don’t usually get dessert at lunch, but today we had crepes suzette (crepes with an orange butter) flambe with vanilla bean ice cream. I mean, come on. Too good.
So needless to say after this meal I was pretty dang full. Brian was gone for dinner and I wasn’t all that hungry, so I just had a bowl of vegetable quinoa soup (similar to this recipe) that I had made this weekend. And yes, I ate it on the couch while watching The Great British Baking Show. #adultingperks
I’m learning to let go of the control of what I am eating everyday and fully embrace tasting and trying new things at school.
Would I normally eat a 3 course meal at lunch? Absolutely not, that’s not realistic, nor is it how I typically like to eat based on my hunger cues. But I see it as part of my learning experience in school. So I’m goin for it.
