In addition to sharing with you ~a day in the life of eating~, I want to say thank you.
A thank you to all of you….
I was talking to my mom the other day and she passed along a message from one of her friends- she was telling my mom that my recipes have saved her on so many nights when she doesn’t know what to cook so she comes to my blog to find a recipe. And that made me SO unbelievably happy because this blog is my passion project. I wholeheartedly believe that food is powerful in so many ways. It is powerful in relation to our health, our relationships, our families, our satisfaction. I could go on and on about why I love food so much. And why I want to share it with all of YOU!
Breakfast was overnight oats made with oats, greek yogurt, chia seeds, blueberries, lemon juice and honey. Made the night before and heated up in the morning it tastes like a blueberry muffin!
And it’s because of that, that I write and photograph for this blog and spend hours upon hours investing in it. I make a solid $2 a month off this blog (lol) so let’s just say I’m not in it for the monay honay. That is why I get so pumped up every time you visit my blog to get a recipe or to see what I ate in a day to get some ideas of your own, or to learn something that I learned in culinary school. Or every time you post a photo on Instagram of a recipe of mine that you made. Because it’s proof to me that this little blog is doing a little something. And that makes my heart so happy.
I got so excited to eat lunch that I forgot to take a picture until halfway through…..whoops. Lunch at school was a salad with a poached egg (not pictured, whoops again), a tomato tartlet and sauteed eggplant with a side of green beans. And dessert was an apple cinnamon cream (you get the idea, ate it too fast to take a pic)
It is my hope that this little virtual table becomes a place that you trust.
That when you want to bring someone to your home and love on them with some grub, you have a place to find a recipe. Or when you are in a rut and are out of ideas of what to make, that you have a place to go. I WANNA BE YOUR PERSON.
I worked out after school and came home ravenous. My go to snack is an apple with peanut butter and sriracha almonds.
All of that is to say- thank you.

I’ve been wanting to try out bok choy so I roasted it and then sauteed it with the shrimp and onions, tossed in a honey soy sauce marinade.
