We have another new series of blog posts! Introducing “What I Ate Wednesdays”
I love reading people’s “What I Ate Wednesday” posts because it gives me some ideas of easy meals I could be eating, and I just love seeing an inside look into how people function. Like I love knowing people’s morning routines, what time they go to bed, when they wake up, what they eat, etc. Call me nosy, call me curious, I just like those things! Anyways, I thought if any of you are like that too, you might find this interesting! I get asked all the time about what I eat in a day. Maybe because I’m a dietitian. Maybe because I’m into cooking. I dunno.
But let me just be clear- this is in no way shape or form an indication of how you should be eating, how much you should be eating, and what you should or shouldn’t eat.
This is simply what I ate on a particular day. The next day I may eat more, I may eat less, it just depends on the day, what I want to eat/what I have available at home. What I do not want from these WIAW posts is for you to eat exactly the same as me. We are all different, our bodies have different and unique needs. Simply use this as ideas of meals/snacks that you could add to your daily routine. I repeat: THIS IS NOT A GUIDE FOR HOW YOU SHOULD EAT.
Phew. Okay now that that’s clear, what DID I eat?? PS this is from a few weeks ago.
As always, I started my day off with a big cup of coffee with cream and cinnamon. This is my absolute favorite part of the day. I go to bed excited to wake up and drink my coffee. Ya ya we know, I’m weird. Thank you, next.
I wasn’t super hungry when I woke up so I started working aka writing blog posts for you lovely people, and had an apple topped with natural peanut butter and a hearty dose of cinnamon. I’m embracing all the fall flavors before winter is upon us!
I’m trying to finish up all of the errands I need to do aka go back to the DMV (ugghhhhhh) before starting school. I take my Swell water bottle with me nearly everywhere I go!
I also brought a handy snack pack of white cheddar popcorn with me on my errands. The fear of getting hangry in public is real, so I usually bring some type of snack with me to spare the people of my sass. You’re welcome in advance.
After running some errands, I came back and wrote a blog post while eating lunch- a veggie soup (topped with Triscuts) that I made at the beginning of the week. The recipe isn’t up BUT it is kinda like a mix of this one and this one.
A few hours after lunch I was hungry again, so I made a snack plate of pretzels, babybel cheddar cheese, hummus with hot sauce and tomatoes. I’ve been on a big tomatoes dipped in hummus kick lately. Perks of (previously) working at home-snack plates.
Brian was out of town, so I was on my own for dinner.
It’s interesting, I have found that when Brian isn’t here I don’t have a strong desire to cook elaborate meals just for myself.
I love cooking and I love eating delicious meals, but I cook as a way to show Bri love, so when he isn’t here, that desire isn’t as strong. Soooo for dinner, I sauteed an onion, a red bell pepper and added a can of black beans, salsa, 1/2 an avocado and hot sauce and called it a day. Usually I would eat a meal like this with rice and/or tortillas, but I didn’t feel like waiting for the rice to cook and I didn’t have tortillas. Such is #reallife. Also can we just talk about how much fiber is in this meal?? My tummy was a tad bit angry at the fiber overload after the fact.
I was recipe testing for my Buckeye post, so naturally I had a Buckeyes as dessert.
After my dessert, I curled up in bed reading Bread and Wine (one of my all time favorite books) before falling asleep. Twas a good day!
